A pair of hands are rolling narrow strips of dough and placing them into rows of four. C/U of the hands plaiting the strips of dough. The hands belong to John Nixey who has been a baker since the age of fifteen. Various shots of the dough being plated. John moves on to another set of smaller strips and plaits them. John takes two unbaked plaited loafs and squashes them together before placing the smaller plait on top to create one large loaf. Another baker enters with a large baking tray onto which John places the loaf. The baker exits carrying the baking tray. M/S of a table in another area of the bakery. In the background are several complicated models made from bread. Although these models will never be eaten as they are the products of John's hobby - bread sculpting. John is working on an unbaked model of a wheatsheaf. C/U of John's face. C/U of his hands adding the final pieces of corn. The narrator explains that the wheatsheaf takes John two hours to make as the 300 ears of wheat have to be modelled separately.
