| Description: | KEEPING THE BUTS OUT OF BUTTER Butter factory. Processes involved in making butter. United Kingdom CU 10 glass quart-sized milk bottles, w/ a pint bottle in front. Dissolve from bottles to CU pound of butter. (Title said it takes 10+ qts. of whole milk to make 1 lb. butter. ) Inside creamery, workers moving around containers of milk. MS workers taking samples by poking sticks into the containers. MCU woman scientist in laboratory sits at table performing a test using a narrow tube which broadens to a bulb shape at bottom; on the table are a tray of samples in small bottles an a tray of more glass tubes. CU looking over her shoulder at the experiment; she seems to be dropping milk into the top of the tube. MCU the scientist looks at the rows of tubes in a box of boiling liquid. She pulls one tube out; the stuff inside the tube is now a dark color, with some stuff settled in the bulb at the bottom, with a space between that and more dark stuff in the top part of the tube. CU she holds up tube and measures the top section of stuff; according to titles she is determining the butter fat content. Cream is pasteurized. CU Coils turning in a vat of very thick looking cream; these are hot coils which heat the cream to 180 degrees F. MS Cream running down "wall" of narrow coils which look almost like horizontal window blinds. These coils are ice-cold. ECU cream running over coils. Cream splashing down at the bottom of the coils. Churning. Big vat (churn) lying sideways; worker comes over, screws a pipe onto something above so that the pipe sticks into an open door on the churn. Vats turning via machinery. MS worker opens door of churn. CU gloppy looking mess inside; looks more like cottage cheese. MS worker closes doors of churns and walks away pushing cart full of butter. MCU molded rectangles of butter moving along rollers on assembly line. Worker pulls down part of machine w/ several blades which cut long sticks of butter into these individual rectangles. MCU woman wrapping butter in paper, placing it with others on conveyor belt. MS several women wrappers on assembly line. | |
